Don't EVER listen to any source that tells you that you can "quick soak" your beans.
You can't... it's not a thing.
They should be soaked overnight at the least, and really I recommend 24 hours.
I use a splash of apple cider vinegar, and change the water at least twice during the soaking process.
The difference between soaked beans and unsoaked/undersoaked beans is like the difference between raw chicken, and cooked chicken... one is good for you, and the other one is bad.
The soaking process is digestion #1, the cooking process is digestion #2, and the final product is much better for digestive health.
