I've been making skillet taters for years but every time I refine the technique a little more.
I don't really recommend cilantro over them though.
I have one herb blend that mixes parsley/oregano/cilantro and I'm not using it for this.
I usually mix all my herbs and spices into different blends in their own bottles and I put away the big bulk bottles of the individual herbs/spices.
Cilantro is a mistake on skillet taters and doesn't taste right.
There are VERY specific reasonings re: flavor but I won't go into it.
My skillet taters are rather provincial. I smother fry the taters in bacon grease with chopped onion and a little salt and pepper.
I like the fried prates its another kind of french fried potatas mmmm hmmm. I'll have me some of the biggens I reckon mmm hmm.
You use olive oil? What kind of oil you use? I generally when I do them just use salt nothing else cos I like the prates tastes.
I used olive oil and some butter. In the past I've used just coconut oil, it's great. I can't tell much of a difference between the oils in the end. Gotta use oil though IMO, there's just no other way.

Ive also brushed and sprayed the skillet with some canola oil, its kind of tasteless. It was nice. Ive also used sesame oil which give them a dark flavor.
Do you slice them dice them chop them flop them? Ive tried many ways to get a different taste of me prates. Diff kind of prates also taste different. I like that cooked but kind dry crisp tasting prates where it tastes kinda like wood would taste much smooth with the oil. With the oil n salt it all comes together like horniness.
I don't use any unnatural oils... canola is some manmade shit.
You gotta chop the taters into chunks that aren't too thick. I guess that would be called diced... but on the slightly bigger side of diced.
You GOTTA lube them taters with something though.
