The pecans are crunchy, but in such a light kind of way, thanks to the toasting beforehand.
The apricots add such a fun splash of flavor, I cannot believe how good it actually is.
I can't believe how much the flavor has improved since they were baked...
It was always "good" but it's like the flavors ended up melding together and settling in.
There's definitely some kind of granola alchemy at play that nobody talks about.

Incredible source of fiber too. There is no way to lose with granola.

I salted those dry ingredients on the pan before toasting them, 100% recommend.
You can definitely taste the salty influence and it actually enhances the rest of the flavors.

I think granola must be a very personal thing...
If you make your own, you will end up with granola which is perfectly tailored to your individual needs and tastes.

Ooo, I think I'll dice up some dried apricots and throw 'em in there too.
And maybe toast some walnuts along with the oats...

So I've got the oats and walnuts in a dry skillet, and I've applied a very light salting and an ever so slight SMATTERING of butter over the top.
I've got all the other ingredients chopped up in a little bit of water with the leftover melted butter I used on the oats... craisins, raisins, chopped apricots and apples.
I shall be "toasting" the oats/walnuts, then I will set them aside.
I will then begin boiling the apples etc. and will first add in the cinnamon, then the maple syrup, and more water as needed.
Finally, I will add in the oats/walnuts.
I will let you all know how it turned out.
I have coined it "Fancy Oatmeal" and it shall be by far the fanciest oatmeal I've ever made.

I’ve only ever had oatmeal for breakfast. Maybe I got carried away with the bacon idea… I shouldn’t be messing with your Fancy Oatmeal!

Cinnamon is kind of strange. I guess it only really goes with sweet things. Definitely clashes with meat
