The blinking is a subconscious method attempting to 'reset' the situation, and to 'refresh' the situation until it's more tolerable and to her liking. Also a method of gaining back control over her emotions and subsequently planning her next move. She gets stuck in that process though, because it seems like she's not sure where the interviewer is gonna take it and she can't adequately plan a method of approach for whatever he's about to say.
