The next door neighbors have been bringing us so many eggs from their hen house that we may actually have to do this.

Sounds like you're in a good locale if TSHTF!
I'm out in the country and I've got some pretty great neighbors...
They grow stuff, have lots of land, do the garden thingy, have livestock etc.
Country living is the best for survival.

Got a few bags of squash, cucumbers and zucchini from them lately too.

It's generally a good area in a survival situation. I'm not sure if the sparse population would be able to defend it if the starving hoardes fleeing Shreveport/Bossier decided to head north. There are more than enough guns out here, just not enough people to man them.
There's been a drought this year, so the garden burned up. I managed to pick two messes of purple hulls and crowders today after we got back from the lake though. What puzzles me is why Turtle Island is underwater when there hasn't been any rain in a month.
