It's been a hot minute since I've had any.
They say to "eat all your colors"...
Red is the only one I can't seem to figure out how to incorporate that easily.
All I can think of is red peppers. Tomatoes are too acidic and supposedly they're bad for my blood type (even though I love them and I'm not even certain that I actually know my blood type).
Green, check. Orange, check. Seems like all that's missing is red and yellow.
You could get both those out of peppers, but I've heard that peppers aren't actually healthy, according to the 'lectins avoidance' theory of diet.
Red chillis take the seeds out so not hot.
Red cabbage, beets there is red leaf lettuce, red onions, and red potatoes? But I guess red potatoes only the skin is red.

So to me it does not represent red.
Beets are a definite consideration... that is not something I've eaten very much of in my life. Perhaps I need to try it.
Peppers still seem the most obvious choice re: red color.
I'll consider all of this.
I like buying frozen vegetables for the most part... I know fresh is best, but frozen is so convenient.
