Her favorite recipe website lets you scale down a recipe to make fewer servings. And it scales everything down. With one fried chicken recipe, the amount of oil was scaled down so low that the oil barely covered the bottom of the skillet.
I don't care if you're frying one piece of chicken or eight pieces, it's the same amount of oil either way.
I didn't even know she was doing that for awhile. I try to do a lot of things where she can't see what I'm doing because she likes to backseat cook. Pisses me off.

Anybody who needs to cook from recipes has no place to bitch about anyone else's cooking.
The only exception to that rule is anyone over 80 years old.
Sometimes it's a culture thing, it's an old school thing.
But if somebody NEEDS recipes, AFTER having cooked for more than a few years...

They ain't "getting it".
Cooking is a process of alchemy and it's like riding a bike...
Once it "clicks" with you, it's intuitive after that.
Like listening to the pitch that diced potatoes whistle at when they're done frying...
It just starts to be intuitive.
I started on recipes, but I haven't used one in years unless it was for cookie dough, which I had to learn about in 2020.

Writing recipes for people who don't know how the fuck to cook is a fine thing to do though.
Don't get me wrong, I own recipe books.
I love recipe books just like I love all other books. I don't use them though.
Thumbing through for inspiration is valid but I'd put my own twist on whatever I settled on anyway.

You gotta learn somehow, especially if your mom/grandma didn't/couldn't teach you.
I learned how to cook on YouTube in 2009-2010... it was pretty awesome.

A nice southern lady, she's actually from Kentucky too.
After that I made it all up. I will have to use recipes to further my dessert/baking though.
Cooking regular food and baking sweets etc. are kinda two different things.

The last time I made my signature cookie dough/raspberry tarts didn't go too well though admittedly.
Wasn't my proudest batch, lmao. It happens, especially when you haven't done it 100 times yet.

She's 75 and disabled. She knows how to cook, but she can't physically do it anymore.
She's a picky eater. If she'd just leave me alone and let me cook what I know how to cook, she'd be happier with the results. Can't tell a Boomer anything though.

I wouldn't give a cookbook to a young person just starting out. I'd tell them to sign up for Hello Fresh and do that for a couple of months. It's an easy way to learn broadly applicable techniques.
I do write down some recipes, such as dumpling dough for chicken and dumplings, because I don't cook it often enough to remember how much of what goes in it. When I was cooking for myself years ago, I cooked chicken and dumplings a lot, and I could crank them out without thinking about it.
I also sometimes have to refer to a recipe when there are so many ingredients in it that I can't remember them all.

Tomato ketchup was originally invented as a way to sell spoiled tomatoes. Not saying they still use spoiled tomatoes.
A lot of processed and packaged foods weren't what they claimed to be before Congress passed food purity laws.

I just made oatmeal with chocolate peanut butter sauce (and craisins). I used semisweet baking chips. This is decadent. The craisins give it some tartness and they're so good in stuff like this if you give them enough time to boil/soften.

I normally wouldn't be into something like this... not a huge fan of chocolate, but sometimes you want it.
I keep the baking chips around for any point in time I actually do want chocolate.
Not gonna lie, huge fan of the Cadbury Fruit & Nut... but buying it is a ripoff, I'll just make it myself.
It's literally chocolate chips, raisins, and chopped nuts, that's it.
That's all it is.
I even throw in craisins though, see that's the beauty of making your own version, it's just better.
One time I got a Cadbury Fruit & Nut in England...
I found it in my suitcase like a year later, and I ate the rest of it.
It was good.

I like more fruit than chocolate, and why's it only gotta be raisins??
Plus, they use almonds and pecans are better. Hell, walnuts are better.
