So, once you land on another planet and start eating the food grown there you body would eventually comprise of cells and atoms native to that planet.

If you could survive the 7 years it takes to construct the cellular body, then theoretically there could be something to that.

I would imagine in order to really adapt to it, it would take more cycles than any human could live through.

There are only like 10 or so 7 year cycles in a human life pretty much.
