Fung, OT, but how do you feel about omelettes? Do you like them? I've always been a bit unappetized by them because sometimes the contents have the bits of undercooked egg clinging to them depending on whether or not they were skillfully cooked... allowed to stay at a lower temp for longer in order to cook the insides, and then at a higher temp ensuring an ever so slightly "browned" type of finish on the outside.
