I do this with fresh cuts of whole chicken breasts cut into tenders. After it's brined, I take itĀ
out of the brining mixture, then re-season, and cook it how I want; usually fried.
That's pretty much what all the best fried chicken joints do.
It really makes a superior batch of chicken! That pickle juice is
Chick-fil-a's not-so-secret weapon. Four hours in a good brine
really elevates good chicken to GREAT chicken!
