This is what I ended up doing.
Boiled four extra large bouillon cubes and copious amounts of garlic powder, parsley, oregano, and black pepper in about three gallons of water. Packed the broth pot with about seven pounds of the chicken strips and slow cooked at 3 on an electric stove for four hours or so. Transferred the contents of the pot to two gallon-size freezer bags. I set the bags down inside a small box so they'll stand upright when I open them later.
That's the base product. I call cooked and deboned chicken meat a base product because I can make several different dishes from it, such as chicken salad, spaghetti sauce, soup, etc. I usually make the base product by boiling and deboning whole thighs, but I had this fuckload of chicken strips to get rid of.
I don't have a fixed recipe for chicken salad. It's the base product and mayonnaise, plus whatever I have on hand. This time it's chopped apples, onions, celery, and walnuts. I've used grapes and dried apricots before too. Just wash your hands and reach down in that bowl and squish it all together.
