I believe it was you who mentioned to me a long time ago that aluminum foil is a bad idea and parchment is better...
Maybe I'm misremembering.
Somebody did, I know that, just not sure who.
Gotta tell you...
The first few times I used parchment in place of foil, I knew my life had changed for the better, forever.
I avoided it for a long time because I didn't understand the difference between parchment and wax paper.
Obviously wax paper melts... parchment doesn't, and it's such a better material for cooking on.
I love the way the paper browns, and the food crisps up on a whole other level, you'd never get that finish with foil.
