You can get LTSC or LTSB they are meant to run machinery. Like IOT.
You can add things back as you want, like say xbox or microsoft store, no metadata from MicroDaft.
Its a better version security updates but no feature updates unless you want them. Up until 2030 if you want them.
You can download it from MS and buy a key or you can just use an activator.
