I don't think they should ever try to end it.
The only safe way is to make each season its own contained thing, wrap up every story element by the end, and leave it open for the possibility of more seasons.
Which is exactly what they did here.
Which is why it's risky to have a season 2 of "Resurrection".
Maybe they will, maybe they won't.
From what I gather, it's 100% up to MCH and of course the network's approval.
Risky. High stakes. Is it possible to do better than Resurrection?
