You should just do it! You are young (I think) and have nothing to lose. You can always return to Kentucky if/when you want. The people are really friendly out west like you mentioned, although like everywhere, it used to be better 20-30 years, at least in California. Now there's way more traffic, overcrowding and all the other problems this state has, but it is still beautiful.
The great thing about living here, you are close to the beaches, the mountains and the desert. There are so many places to go to get away from it all. Just avoid going to the popular camping spots on the weekends and summers if you can, because you'll have weekend warriors from LA and San Fran going there too.
If you have flexibility, I think summer is a good time to leave CA and go up north to Oregon, Washington or the Rockies (cooler temps too). I think September is the best time to travel around CA, kids are back in school and summer traffic has died down but the temps are still relatively warm. I actually much prefer CA in the fall and spring more than the summer. The great thing about being mobile, you can just leave for the summer and come back in the fall!
If you do end up living in a van, you should really consider making a YouTube channel about your adventures, you already have a following from this site etc.
