The essential elements of Southern potato salad are:

potatoes, preferably red
hard-boiled eggs
chopped onion, preferably red
mayonnaise
yellow mustard
sweet relish
salt
pepper

I've a surplus of celery right now, so I'll be chopping that up and adding it too.

All the beef and bean burritos lately ain't helping either.

I also have a surplus of spring mix, precooked chicken strips, and big spinach tortillas, so I'm gonna bust out the food processor and whip up a batch of chicken salad for burritos.
